Spring Rolls is one my favorite appetizers to order in an Asian restaurant, whether they are prepared fried or fresh! Fresh spring rolls are unbelievably easy to make, delicious and healthy! They are great on their own or up the flavor with homemade peanut sauce for dipping.

The filling is flexible to whatever you prefer – you can add more of a certain ingredient if you prefer, plus this dish can easily be converted to be vegetarian by omitting meat.

Ingredients

  • 50g rice vermicelli
  • 1 cup torn butter lettuce, ribs removed
  • 1 cup thinly sliced red cabbage
  • 2 medium peeled carrots, cut into matchsticks or sliced into strips
  • 2 Persian cucumbers or 1 small cucumber, thinly cut or sliced into strips with a julienne peeler
  • 2 medium jalapeƱos, ribs and seeds removed, thinly sliced
  • 1 teaspoon sesame oil
  • 1/4 teaspoon fine sea salt
  • 1/4 cup thinly sliced green onions
  • 1/4 cup roughly chopped fresh cilantro
  • 1/4 cup roughly chopped fresh mint
  • 8 sheets rice paper (spring roll wrappers)
